This is quite simply a classic Merlot – soft, juicy, medium-bodied and delicious. Often used in blends to soften other more powerful grape varieties, this is a great example of the Merlot standing beautifully by itself. The richness of the wine is immediately apparent with a youthful fragrant light red fruit bouquet, red plum, raspberry with hints of fruit jam essences.

On the palate, the red fruits are tantalising your taste buds, and this is well complimented with subtle exotic spice and integrated oak undertones. This wine was made to drink young but will certainly also cellar well for another 3-4 years.

Will pair beautifully with roast chicken, pork loins, pan-fried duck breast, veal or even a Tennessee Meatloaf.

Description

Fruit for this delightful Merlot was harvested from the Margaret River wine region. This is a Merlot for the serious wine enthusiast. It is coloured a deep ruby red, highlighted with purple hues. The nose shows fruity and mellow aromas of cranberries, raspberries, strawberries and blackberries, coupled with chocolate characters. The palate refreshingly opens with sumptuous plum flavours as well as a lovely red berry fruit burst dominated by cranberries. A long length of flavour follows through to a soft, creamy and off-dry finish. Best when served just below room temperature, this Merlot is a wine of prominent delicacy with light acidity. This exquisite red wine tastes great with foods such as roast chicken with thyme and onions, slow-cooked beef stew, veal chops with mushrooms, and roasted pork loins.

 

CULTIVATED.
As with all good Merlots of the world, this is elegant, sophisticated and refined. This style of wine is a result of the climate and conditions (terrior) of the region that the wines are grown in. Margaret River has a temperate maritime climate with warm days and cool nights. The fruit is grown using strict organic principles, meaning we don’t use any toxic chemicals in our vineyard; we believe our wines taste better this way. The Merlot is machine harvest in the cool of the night using the selective harvester.

 

CRAFTED.
The fruit is crushed and the resulting must is pumped into a tank, the juice is left in contact with the skins for 7-days, allowing colour, tannin and flavour extraction. During this period a cultured yeast has been added to the must and fermentation will occur. The wine is racked off and then matured in older American and French oak barrels with a portion of the wine remaining fresh in the tank. This is all assembled together after the maturation ready for bottling. We only filter our red wines, no fining agents are used and onlyu small levels of sulphur are added prior to bottling.

 

COLOUR
A vibrant, deep ruby.

 

AROMA
The wine jumps out of the glass with seductive and prominent aromatics. Red fruits lead the way: red currants, mulberries, bay leaf, earthy spice and mocha.

 

FLAVOUR
The wine is soft, juicy and medium bodied. Its richness is immediately apparent with the red fruits tantalising your taste buds. This is complemented with subtle exotic spice and well-integrated oak offering sweet vanilla. This is sure to impress any wine lover, particularly considering its price point.

The grapevine in its wild state is a climber and its natural habitat was the forest. Over 5000 years ago man took the vine and began to cultivate it, presumably for wine. Wine-growers have long known the importance of soil, climate and the grape variety, a combination the French call “terroir”. Today we also understand the importance of viticulture the science behind cultivating the fruit. It is a well known fact that the creation of a great bottle of wine starts in the vineyard. The purity and quality of the fruit cultivated will dictate the quality and purity of the wine. Our philosophy behind the cultivation of our vines is simple, if we treat the environment with respect and work with nature, then in return we will be gifted with pure, clean and healthy fruit. We at Churchview Estate pride ourselves in doing our bit to look after the environment. Over the last 20 years we have worked hard to convert the vineyard from a full conventional to an organic operated vineyard. This means that we do not use any agricultural chemicals on the property and those substances used to tackle disease are approved for organic farming. Our management practices are based around the health of the soil. We work to keep the soil healthy and in return the vines will naturally be healthy as well. We carry out regular soil sampling to ensure that the soil is in balance, this ensures that the nutrients which naturally occur in the soil are readily available to the plant. By carrying out regular soil tests we can tell what the vines are actually using to produce the grapes and therefore only replenish the essential nutrients that are being used by the vine. We maintain a complete cover crop between the rows and under the vines. This means we do not need to use any herbicides which have adverse effects on the overall soil health. Cover crops are made up of rye grasses and clovers which we let reseed before mowing and slashing. In the vineyard we will also seed lupins and clover to help the organic matter build up over time. To keep our soils healthy we spread organic compost throughout the vineyard on a yearly basis. We follow this with regular applications of organic seaweed, fish emulsion and potassium humate. This is applied not just to the vines but to the cover crops as well. This helps to have a complete healthy and fertile environment. In 2017 we applied for our Australian Certified Organic status and now, Vintage 2020 we can label our wines as “certified” organic.
