A sweet yet refreshing dessert wine crafted and aged to perfection by the brilliant team at Taltarni. Cordon cutting refers to the method of cutting the fruit bearing cordon, stopping the flow of water to the upper part of the vine. In response, the vine will reclaim water from the berries to support the foliage, resulting in concentrated berries with intensified flavours and dramatically increased natural sugar ripeness of the fruit. The berries are then harvested, pressed, and slowly fermented so as to maintain the rich flavours. The ferment was intentionally stalled to retain some sugar, to balance the zesty nature of ripened Sauvignon Blanc. It is indeed an uncommon take on Sauvignon Blanc that has resulted in a rich wine that has the flavours of a dessert wine without the weighty, overly sweet texture. With lifted aromatics of tropical fruits of the dehydrated berries, the aromatics are complimented with flavours of boysenberry, peach, and a lime finish. A brilliant style of dessert wine, without the sticky, syrupy texture often seen in Aussie stickies. Already given ample time to mature but will still cellar for another 10 years. A perfect wine served alongside a sweet dessert, fruit cocktail or cheese platter.

Brand

Taltarni

The first wine from Taltarni Vineyards was released in 1977; immediate success followed with the wine collecting gold at the Royal Melbourne Show – an early acknowledgment of the potential of the vineyard. In 1979, Taltarni’s Cabernet Sauvignon was awarded the Los Angeles Times International Best Red Wine, ahead of world greats. At 37° latitude, the Pyrenees is in a perfect climatic band for the production of high-quality grapes. The rich soils of red clay, quartz and sandy loam create ideal growing conditions and the cool nights and warm days allow for slow ripening. Taltarni Vineyard and Winery was founded on the principles of individuality, independence and expression, which still guide us today. Combining old-world traditions with innovative new-world techniques, Taltarni produces a diverse range of high-calibre still red and white wines, and méthode-traditionnelle crafted sparklings. Remaining steadfast in our commitment to crafting refined wines of elegance and balance, Taltarni’s portfolio continues to be a reflective expression of the varietal and terroir from which our wines are born.
